Cannellini Bean Salad with Rocket & Parsley Dressing

Protein rich and full of flavour!nAvocados are known as a superfood for a number of reasons, the wonderful Vitamin E and the good fat content are the ones I will focus on...and great for skin and hair.

Rocket, parsley and garlic are fantastic for the liver.

Serves 4


4 cups Cannellini beans, drained

1 avocados, sliced

2 celery stalks, sliced

10 radishes, finely sliced

1 tbsp white wine vinegar

salt and pepper to taste

For the dressing

1.5 cups rocket 

0.5 cup flat leaf parsley

3 cloves of garlic, crushed

1 lemon, juiced

1 shallot, roughly chopped

0.25 cup olive oil

0.5 tsp salt

1 tsp fish sauce or 2 anchovies (both optional)



    1. Put all the dressing ingredients into a food processor and blend until smooth. Set aside.

    1. Meanwhile, toss the remaining ingredients except for the avocado gently in the vinegar and seasoning.

    1. Arrange ingredients on a plate, randomly placing the avocado slices within and the pour over the dressing and serve immediately.

Top Tip: You can also heat the beans slightly to suit a colder day.
