Endive & pomegranate salad

This is a liver loving recipe with the sulphurous endive and the super pomegranate both support liver detoxification as well as a great source of fibre and anti-oxidants.nThe apple cider vinegar helps to regulate the body's acid levels and there have been claims too that it supports the liver.

Serves 4

Ingredients:

2 endive, finely sliced

0.5 small Chinese cabbage, finely sliced

1 pomegranate, seeds removed and kept aside

1 lemon, juiced and half the zest set aside

1 apple, chopped into 2cm cubes

1 small handful of walnuts, broke

0.5 handful of almonds roughly hand chopped

 

For the dressing

2 shallots, finely diced

0.25 tbsp apple cider vinegar

0.75 cup olive oil

2 tbsp date syrup or maple syrup

0.5 tsp mustard powder

1 tsp cracked pepper 

salt to taste
Method:
1. Combine all the ingredients in a bowl and toss until they are all covered with the lemon juice. Leave to marinade.
2. In a bowl whisk all the dressing ingredients together until they emulsify and then pour over your salad and serve immediately.
