Gluten Free, Vegan Pancakes
Gram flour - This amazing flour is a staple in every Indian household because it is so incredibly healthy. It's made from ground chickpeas and is very nutritious for you. It is a literal powerhouse of a flour. One half cup of chickpea flour (Besan is its traditional name) contains the following:
· 178 calories
· 3 grams of fat
· 10 grams protein
· 5 grams fibre
The flour is full of protein and can often times fulfil 20% of your daily protein requirement. This is why I love to use it in the morning for pancakes. They give me the nutrients I need right away for a fresh start to every day. You can modify this recipe to your liking or use it exactly as I have... either way, you'll get the protein you need and be on your merry way.
Besan Pancake Recipe:
½ cup chickpea flour
¼ tsp baking powder
½ cup water – add more until a runny liquid
This is your basic pancake mix and because it has a really dense earthy flavour this pancake can take a lot of extra flavours.
What I add to my Besan Pancakes:
Mix:
¼ chopped red onion
1 tbspn chopped coriander
Salt to taste
Chopped tomatoes
1 tbspn chopped green pepper
Prep the veggies, make the mix and prepare the frying pan with some oil and pour in liquid. It takes a bit longer than traditional pancakes so hang in there and about 4 minutes later turn over. Give this side longer.
TIP: The larger your skillet the less likely this is to break up.
Toppings:
Serve with toppings of avocado, spinach, sprouts salsa.
