Mushroom & Cinnamon Delight

Quick and easy, great for summer or winter! Mushrooms are very low in calories, high in potassium and high in copper, both minerals have cardioprotective qualities. Due to mushrooms inhibitory action of a certain enzyme which plays a role in the metabolism of sex hormones, it is therefore thought that consumption of mushrooms could help to balance these hormones and prevent the risk of prostate and breast cancers.

Serves 4

Ingredients:

800g mixed button and chestnut mushrooms

2 packets parsley, roughly chopped and some aside for garnish

3 stalks thyme, finely chopped

2 cinnamon sticks

4 cloves garlic, crushed cup olive oil

1.5 lemons, juiced

1 generous pinch cinnamon lemon, very thinly sliced

Salt and pepper

 

Method:

    1. Place a large flat pan on a very hot heat.
    2. Meanwhile toss together the mushroom, herbs, cinnamon sticks and garlic. Pour into the pan with a little warm water and leave on a hot flame 7-9 minutes. Be patient, do not stir or shake.
    3. Now stir the mushroom, allowing any left juices to evaporate. Pour in the lemon juice, ground cinnamon and plenty of salt and pepper. Remove from the heat then pour over the olive oil and toss until the oil is evenly spread.
    4. You can serve this warm or at room temperature. Just make sure you stir in the extra parsley and lemon slices at the last minute. Adjust the seasoning again.
