Raw Butternut Squash 'Rice' Salad

Fabulous taste and texture, not to mention the vibrant colour! Butternut squash has been said to help balance blood sugar levels as well as being absolutely full of the antioxidant, beta-carotene, which has been linked, in dietary intake, to reduced risk of breast cancer and stronger vision. Walnuts have high levels of Vitamin E, Omega 3's and liver supportive qualities.

Serves 4

Ingredients:

butternut squash

small red onion

1 bunch of coriander, roughly chopped

1 lemon, juiced and half the zest set aside

1 tbsp dried cranberries or raisins

1 small handful of walnuts, broke

1 pinch of cumin

3 tbsp olive oil

salt pepper to taste

 

Method:


    1. In a food processor with an 'S' blade whiz the butternut squash until it is blended into the size of rice grains, remove and empty into a large mixing bowl.

    1. Slice the onion very thinly and mix it into the butternut squash blend along with all the other ingredients, then leave to marinade if you have time.
