Easy Vegan Pesto
INGREDIENTS
2 cups basil leaves
1⁄4 cup hemp seeds
1⁄2 cup extra virgin olive oil
2 tbsp nutritional yeast
1-3 cloves of garlic, or 1.5 tsp garlic powder
1 medium courgette
2 tbsp hemp seeds
INSTRUCTIONS
Use a veggie peeler or spiraliser to make “noodles” out of the zucchini. Put all ingredients for the pesto in a blender or food processor. Blend.
Top the 'zoodles' with your vegan pesto and toss, then add on the extra hemp seeds to give some crunch.
